Chocolate-Dipped Coconut Balls
- 2 (1 lb.) boxes confectioners sugar
- 1/2 c. melted butter or margarine
- 2 Tbsp. Crisco
- 1 (14 oz.) can sweetened condensed milk
- 2 c. flaked coconut
- 1 (12 oz.) pkg. semi-sweet chocolate pieces
- In large bowl combine coconut, sweetened condensed milk and melted butter.
- Set aside in a cool dry area for 2 to 3 hours. Then add confectioners sugar and knead mixture to well mixed. Shape into 1 inch balls and place on baking sheets lined with wax paper.
- Freeze until firm.
- Once frozen these can be dropped into Ziploc storage bags to dip at a later time.
- When ready to dip, melt together chocolate pieces and Crisco in top of double boiler. Dip tops of frozen balls in warm chocolate mixture (chocolate will set immediately.)
- Store in cool place.
- Makes 8 dozen pieces.
