Tamale Pie
- 1 small onion, minced
- 1 clove garlic, minced
- 1 Tbsp. fat
- 1 lb. ground beef
- 1/4 lb. bulk sausage
- 1 can (1 lb.) tomatoes
- 1 can (1 lb.) whole kernel corn, drained
- 1 1/2 tsp. salt
- 2 Tbsp. chili powder
- 18 pitted ripe olives
- 1 c. corn meal
- 1 c. milk
- 2 eggs, well beaten
- 1 c. grated Cheddar cheese
- Heat oven to 350u0b0.
- Saute onions and garlic in hot fat until yellow.
- Add meat and brown.
- Pour off excess fat.
- Add vegetables and seasonings, bring to a boil.
- Pour mixture into a deep casserole.
- Press olives into meat.
- Combine corn meal, milk and eggs.
- Spoon over filling.
- Sprinkle with cheese.
- Bake 1 hour. Serves 6 to 8.
