Country Style Rigatoni
- 8 oz. pkg. rigatoni
- 1/2 c. sliced onion
- 2 Tbsp. oil
- 1 1/2 c. cubed, cooked ham
- 1 c. sliced fresh mushrooms
- 1/8 tsp. pepper
- 1/2 c. dry white wine or white grape juice
- 1 tsp. parsley flakes
- 1/2 tsp. marjoram leaves
- 1 1/2 c. frozen broccoli, thawed
- 1 c. diced, peeled potatoes
- 1/2 c. shredded Swiss cheese
- Bring water to boil for rigatoni.
- Meanwhile, in large saucepan, saute onion in oil until tender.
- Add ham, mushrooms and pepper.
- Cook, stirring occasoinally, about 2 minutes.
- Add wine, parsley and marjoram leaves to ham mixture.
- Cover and simmer over low heat.
- Add rigatoni, broccoli and potatoes to boiling water. Cook rigatoni to desired doneness as directed on package.
- Drain rigatoni and vegetables.
- Rinse with hot water.
- In large serving bowl, combine ham mixture, rigatoni and vegetables.
- Stir in cheese. Serve immediately.
- Serves 6.
