Creole Pork Chops

  1. Brown chops and remove.
  2. Add onion and the next 4 ingredients and saute.
  3. Remove 1/2 of these vegetables; set aside.
  4. Add tomatoes, hot sauce and pepper to remaining vegetables in pan. Combine cornstarch in 1 tablespoon water.
  5. Add to vegetables. Cover; cook for 1 minute on medium heat.
  6. Stir and mix.
  7. Put chops in pan; cover and cook 15 minutes.
  8. Stir other half vegetables in rice.
  9. Serve chops over rice.
