Creole Pork Chops
- 4 boneless pork chops
- vegetable cooking spray or oil
- 1/2 c. chopped onion
- 1/2 c. chopped celery
- 1/2 c. chopped green pepper
- 1/2 c. chopped sweet red pepper
- 1 clove garlic, chopped
- 1 can tomatoes (whole), liquid drained and chopped
- 1/2 tsp. hot sauce
- 2 c. cooked rice
- 1 tsp. cornstarch
- 1/4 c. chicken broth
- Brown chops and remove.
- Add onion and the next 4 ingredients and saute.
- Remove 1/2 of these vegetables; set aside.
- Add tomatoes, hot sauce and pepper to remaining vegetables in pan. Combine cornstarch in 1 tablespoon water.
- Add to vegetables. Cover; cook for 1 minute on medium heat.
- Stir and mix.
- Put chops in pan; cover and cook 15 minutes.
- Stir other half vegetables in rice.
- Serve chops over rice.
