Sicilian Quiche
- 1 unbaked pie shell
- 4 oz. grated Mozzarella cheese
- 2 c. peeled tomatoes
- 1/4 lb. sliced salami, cut in strips
- 1 medium onion, minced
- 1 medium green pepper, diced
- 3 eggs
- 3/4 c. milk
- 2 tsp. onion powder
- 3 Tbsp. parsley
- 1 tsp. oregano
- 1/2 tsp. garlic powder
- Bake pastry shell at 450u0b0 for 8 minutes.
- Be sure to prick shell before baking.
- Saute onion and green pepper.
- Arrange a layer of 1/2 the cheese, 1/2 the tomatoes, 1/2 the onion and green pepper mixture and 1/2 the salami into the baked pie shell. Repeat layers.
- Beat eggs; stir in milk and remaining ingredients. Pour over layers in pastry shell; bake at 450u0b0 for 10 minutes. Reduce temperature to 350u0b0; bake for 35 to 40 minutes, until set.
