Jewel Fruit Cake
- 1 1/2 c. raisins
- 1/4 c. water
- 1/2 c. shortening
- 1/2 c. sugar
- 1 egg, well beaten
- 1/2 tsp. soda
- 1/2 tsp. hot water
- 1/2 c. thick applesauce
- 1 1/2 c. flour
- 1/2 tsp. salt
- 1/2 tsp. nutmeg
- 1/2 tsp. cinnamon
- 1 1/4 c. gumdrops (not licorice or green), cut into small pieces
- 1/2 c. chopped nuts
- Simmer raisins and water for 3 minutes, just until water is absorbed.
- Cream shortening with sugar.
- Blend in egg.
- Dissolve the soda with the hot water, add this to applesauce and blend into creamed mixture.
- Sift together flour, nutmeg, cinnamon and salt. Add in gumdrops and nuts.
- Blend this into creamed mixture; add cooled raisins.
- Pour into greased and lined (3 thicknesses of wax paper) loaf pans.
- Bake at 300u0b0 for 1 3/4 hours.
- Cut when cool.
