Garlicky Beef With Peppers
- 1 lb. boneless round steak, 1/2-inch thick
- 1 Tbsp. margarine
- 1/2 c. chopped onion
- 4 cloves garlic, finely chopped
- 1 tsp. thyme
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 2 bell peppers, cut in 1/4-inch strips
- 1/4 c. dry red wine
- 2 Tbsp. cornstarch
- 1 c. beef broth
- 3 c. hot cooked noodles
- Cut beef in 2-inch strips with the grain.
- Cut strips diagonally across grain into 1/4-inch slices.
- For ease in cutting, freeze 1 1/2 hours.
- Heat margarine in 10-inch skillet until melted.
- Add onion, garlic, thyme, salt and pepper.
- Cook and stir over medium-high heat until onion is tender.
- Stir in beef and bell peppers.
- Cook and stir about 4 minutes or until beef is no longer pink.
- Stir in wine.
- Reduce heat.
- Cover and simmer 5 minutes.
- Stir cornstarch into beef broth.
- Stir into beef mixture.
- Cook and stir until thickened.
- Serve over noodles.
