Herring Salad(A Swedish Classic)

  1. Drain herring pieces and cut into dices.
  2. Discard remaining sauce in jar.
  3. Mix thoroughly, but carefully, the herring, potatoes, beets, gherkin, apple and onions.
  4. Blend vinegar, water, sugar and pepper well and add to mixture, stirring gently. (Dyed-in-the-wool Swedes fold in a 1/2 cup stiffly-whipped cream at this stage, but it is not necessary; the dish is delicious without it.)
  5. Pack mix in chilled mold and refrigerate overnight. Unmold and garnish with sliced eggs.
  6. Serve with sour cream beaten stiff and colored with pickled beet juice.
