Microwave Taco Soup
- 1 lb. lean ground beef
- 1 can undrained pinto beans
- 1 can undrained kidney beans
- 1 large can tomatoes
- 1 can drained corn, whole kernel
- 1 small can chopped green chilies
- 1 pkg. taco seasoning mix
- 1 pkg. Hidden Valley seasoning mix
- Brown meat in a 3-quart casserole dish in the microwave for about 7 minutes on High.
- Stir a couple of times and be sure the meat is crumbled while you are browning it.
- Drain.
- Add the taco seasoning mix and the Hidden Valley seasoning mix to the browned meat and stir.
- Add all the other ingredients and microwave on High for about 7 to 8 minutes.
- Stir about halfway through the cooking time.
- Serve with grated cheese and corn chips if you desire.
- This is even better the second day.
