Coopers Famous Pound Cake
- 3 1/2 c. sugar
- 1 lb. butter, softened to room temperature
- 6 eggs (room temperature)
- 1/2 c. milk
- 4 c. flour (cake flour preferred)
- 1 tsp. baking powder
- pinch of salt
- 1 tsp. vanilla flavoring
- 1 c. nuts and 1 c. raisins (optional)
- Preheat oven to 300u0b0.
- Mix dry ingredients except sugar together.
- Sift 3 times.
- Cream butter and sugar mixture.
- Beat eggs and then add to butter and sugar mixture.
- Using electric mixer, add flour and milk intermittently to butter, eggs and sugar mixture.
- Flour should be added as the very last ingredient.
- Then add vanilla to the mixture.
- Flour and grease round tube pan.
- Bake cake to golden brown, about 2 hours.
- One cup floured nuts and 1 cup floured raisins may be added to mixture as last ingredients if desired.
