Chicken-Broccoli Or Asparagus Casserole
- 2 chicken breasts, deboned and cut into pieces
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/2 c. corn oil
- 2 (10 oz.) pkg. frozen broccoli or asparagus
- 1/2 c. mayo
- 1 tsp. lemon juice
- 1/2 tsp. curry powder
- 1 c. sharp Cheddar cheese, shredded
- Sprinkle chicken with pepper and salt.
- Pour oil in 10-inch frypan and heat over medium flame.
- Add chicken and saute slowly about 6 minutes or until chicken is white.
- Remove from pan and drain
- on paper towel.
- Cook asparagus or broccoli by package directions.
- Drain.
- Line bottom of baking pan with vegetable oil. Place chicken on top.
- Mix together chicken soup, mayo, lemon juice and curry powder.
- Pour over chicken.
- Sprinkle cheese on top of soup mixture.
- Cover with foil.
- Bake at 375u0b0 for 30 minutes.
