Chili Pasta Grande
- Mazola (no stick spray)
- 1 medium onion, chopped
- 1 (14 oz.) can Italian stewed tomatoes
- 1 (10 oz.) can kidney beans, rinsed and drained
- 1 pickled jalapeno pepper, chopped (about 1 Tbsp.)
- 2 tsp. chili powder
- 1/4 tsp. ground cumin
- 4 oz. (about 1 c.) cooked elbow macaroni
- 1/2 c. light sour cream
- chopped cilantro (optional)
- Generously spray large skillet with cooking spray.
- Heat over medium heat.
- Add onion.
- Cook stirring constantly 2 minutes.
- Add undrained tomatoes, kidney beans, jalapeno pepper, chili powder and cumin.
- Bring to boil.
- Reduce heat and simmer, stirring occasionally, 15 minutes.
- Toss with elbows.
- Serve with sour cream and cilantro.
- Makes 4 servings.
