Fix Ahead Chicken Casserole
- 2 lb. chicken parts
- 1 can condensed cream of chicken soup
- 1/4 tsp. salt
- 4 medium carrots, quartered
- 1 (10 oz.) pkg. frozen lima beans
- 2 Tbsp. shortening
- 1/2 soup can milk
- 1/4 tsp. poultry seasoning
- dash of pepper
- 6 small onions
- Brown chicken in shortening.
- Place in a 2-quart casserole. Discard drippings.
- Stir soup, milk and seasonings together, heat. Add carrots and onions.
- Cover and cook over low heat for 10 minutes.
- Add lima beans and cook until separated, stirring often. Pour over chicken.
- Cover and refrigerate immediately until 1 hour and 15 minutes before serving.
- Bake, covered, in 375u0b0 oven for 1 hour.
- Uncover and bake 15 minutes more or until chicken is tender.
- Decrease baking time, if covered, by 15 minutes if not refrigerated.
- Makes 4 to 6 servings.
