Chicken Angelo(7Ww Points)
- 8 ounces fresh mushrooms, sliced
- 16 ounces boneless skinless chicken breasts, cut into thin strips
- 1/2 cup liquid egg substitute
- 1 cup dry breadcrumbs
- 2 tablespoons light margarine
- 6 ounces fat-free mozzarella cheese slices
- 3/4 cup fat-free chicken broth
- 8 ounces egg noodles
- Place half of the mushrooms in a 13x9x2" baking dish. Dip chicken in egg substitute; roll in bread crumbs. In a skillet, melt the margarine over medium heat. Brown chicken on both sides; place on top of mushrooms. Arrange remaining mushrooms over the chicken; top with cheese slices. Add broth to pan. Bake at 350u0b0 for 30-35 minutes. While chicken is cooking, boil noodles according to package directions, omitting oil and salt. Drain. Serve chicken over hot noodles.
