Breakfast Casserole
- 2 Tbsp. butter
- 2 c. (8 oz.) shredded Swiss and sharp processed American cheese
- 12 eggs
- salt and pepper to taste
- 1 (12 to 16 oz.) roll breakfast sausage, sliced into 15 pieces and fried
- 4 oz. can drained mushroom stems and pieces
- 2/3 c. half and half
- paprika or snipped parsley (if desired)
- Preheat oven to 350u0b0.
- Spread the butter in a 13 x 9-inch pan. Combine the cheeses and sprinkle half over the buttered pan. Break the eggs on top of the cheese.
- Poke yolks, but do not stir. Sprinkle with the salt and pepper to taste.
- Top with the sausage and mushrooms.
- Pour the half and half over.
- Top with remaining cheese. Sprinkle with paprika or parsley (if desired).
- Bake 30 minutes until golden brown.
- Makes 15 servings.
