Sweet And Sour Pork
- 1 lb. boneless pork, cut into 3/4-inch pieces
- 2 Tbsp. oil
- 1 c. water
- 1/2 tsp. salt
- 8 1/4 oz. can pineapple chunks, drained
- 1 c. water chestnuts, sliced thin
- 3/4 c. thin diagonally cut carrot slices
- 1/2 c. apricot preserves
- 2 Tbsp. cider vinegar
- 2 Tbsp. cornstarch
- 2 Tbsp. soy sauce
- 1 large green pepper, cut into strips
- hot cooked rice
- Brown meat in oil in large skillet or wok.
- Add water and salt; bring to boil.
- Reduce heat.
- Cover; simmer 30 minutes, stirring occasionally.
- Add pineapple and vegetables; bring to boil.
- Reduce heat.
- Cover; simmer 5 minutes.
- Stir in apricot preserves, vinegar, cornstarch and soy sauce.
- Cook, stirring constantly, until clear and thickened.
- Serve over rice.
