Sweet And Sour Pork

  1. Brown meat in oil in large skillet or wok.
  2. Add water and salt; bring to boil.
  3. Reduce heat.
  4. Cover; simmer 30 minutes, stirring occasionally.
  5. Add pineapple and vegetables; bring to boil.
  6. Reduce heat.
  7. Cover; simmer 5 minutes.
  8. Stir in apricot preserves, vinegar, cornstarch and soy sauce.
  9. Cook, stirring constantly, until clear and thickened.
  10. Serve over rice.
