Fix Ahead Casserole
- 1 lb. ground beef or venison or sausage
- 1 c. (or so) green onions, chopped
- 1 qt. spaghetti sauce (your choice)
- 6 to 8 lasagna noodles
- 1 qt. cottage cheese (I use low-fat)
- 2 c. grated Cheddar or Mozzarella
- 2 Tbsp. chopped chives
- Parmesan cheese
- 1 c. sliced black olives
- 1 c. sliced mushrooms (fresh or canned)
- Brown meat; drain fat.
- In large bowl, mix cottage cheese, Cheddar, onions, chives and mushrooms.
- Mix meat with spaghetti sauce in another bowl.
- With casserole dish, place sauce/meat mixture to cover bottom.
- Add layer of uncooked noodles, layer of cottage cheese mix, layer of noodles, layer of sauce mix. Continue until casserole is full.
- Sprinkle top with Parmesan. Freeze or put in refrigerator overnight.
- Bake at 350u0b0 for 30 minutes.
- Let stand for 15 minutes.
- If frozen, thaw before baking or add 30 minutes to cooking time.
