Crab Sandwich
- 3 strips bacon
- 1/4 lb. mushrooms, sliced
- 1/4 c. chopped onion
- 1 c. crab meat
- 1 c. grated Swiss cheese
- 1/3 c. grated Parmesan cheese
- 1/2 c. mayonnaise
- 6 English muffins, split, OR thick French bread slices
- Butter or margarine
- Dash cayenne pepper
- Dash paprika
- Cook bacon until crisp, remove and drain.
- Saute mushrooms and onions in bacon drippings until the mushrooms begin to turn brown.
- Cool.
- Combine the crab, cheeses, and mayonnaise, then add to the bacon/mushrooms/onions mixture.
- Spread the mixture on sliced, buttered muffins.
- Place sandwiches on a cookie sheet and bake at 400u0b0 for 15 minutes.
- Serves 6.
- You may substitute shrimp for the crab meat, if you wish.
