Breakfast Quiche
- 14 slices bacon, cooked
- 1/4 c. onion, chopped
- 1/4 c. green pepper, chopped
- 1 Tbsp. butter or margarine
- 3/4 c. Swiss cheese, grated
- 4 oz. can mushrooms
- 3 eggs
- 2 c. milk
- 1 Tbsp. plus 1 tsp. flour
- 1 tsp. salt
- 1/2 tsp. Worcestershire sauce
- 1/4 tsp. basil
- 2 (9 in.) pastry shells
- Crumble 10 pieces bacon.
- Set aside.
- Saute onion and green pepper in butter.
- Alternate a layer of the cheese, bacon, onion and pepper mixture, and mushrooms on each pastry shell.
- In a small bowl blend together lightly beaten eggs, milk, flour, salt, Worcestershire sauce and basil.
- Pour half the mixture over each pie.
- Bake at 375u0b0 for 35-40 minutes.
- It is done when knife comes out clean.
