Creole Sauce(This Is The Best.)
- 1 onion, chopped fine
- 2 or 3 garlic cloves, minced
- 1 green bell pepper, chopped and seeded
- 4 c. tomatoes, chopped or 2 (15 oz.) cans tomato sauce
- 1/2 tsp. sweet basil
- 1/2 tsp. oregano
- 1 1/2 tsp. molasses (optional)
- 1/4 tsp. pepper (optional)
- 1/2 tsp. chili powder
- pinch of cayenne pepper
- 1/2 tsp. sea salt
- 1 c. leftover mushroom gravy or fresh mushrooms, chopped
- 1/4 c. tamari soy sauce
- 1/2 c. water
- Saute onion, garlic and green pepper lightly in vegetable or olive oil in a deep skillet or wok.
- Add the remaining ingredients and cook for 15 minutes.
- Sauce may be simmered longer but should cover it while doing so.
- Serve over stuffed pepper, noodles, eggplant, rice or seafood.
- Yields 5 cups.
