Chicken With Mushrooms
- 1 lb. boneless, skinless chicken breasts
- 1/2 medium bell pepper, chopped (medium)
- 1 Tbsp. chopped pimiento
- 1 c. chicken broth
- 1 c. cooking wine (white)
- cooking oil
- 2 1/2 large onions, chopped coarsely
- 2 tsp. minced garlic
- 1 (6 oz.) jar mushrooms
- 1 (4.5 oz.) jar mushrooms, sliced
- parsley
- salt, pepper, garlic powder and paprika
- Slice chicken breasts in strips. Season with salt and pepper. Heat oil. Saute chicken. Add garlic powder; this will help chicken brown and will make a basis for your gravy.
- When chicken is brown, add onions.
- When almost clear, add bell pepper and minced garlic. Cook for about 5 minutes.
- Add chicken broth and wine. Simmer for about 20 minutes or so until gravy has reduced that it has some body to it.
- Add pimiento, mushrooms and parsley. Season to taste.
- May be served over angel hair pasta or rice.
