Chicken With Mushrooms

  1. Slice chicken breasts in strips. Season with salt and pepper. Heat oil. Saute chicken. Add garlic powder; this will help chicken brown and will make a basis for your gravy.
  2. When chicken is brown, add onions.
  3. When almost clear, add bell pepper and minced garlic. Cook for about 5 minutes.
  4. Add chicken broth and wine. Simmer for about 20 minutes or so until gravy has reduced that it has some body to it.
  5. Add pimiento, mushrooms and parsley. Season to taste.
  6. May be served over angel hair pasta or rice.
