Stir-Fried Beef And Vegetables
- 1/2 lb. boneless beef sirloin steak
- 1 (10 1/2 oz.) can beef broth
- 1 Tbsp. cornstarch
- 1 Tbsp. soy sauce
- 3 Tbsp. vegetable oil
- 1 clove garlic, minced
- 4 green onions, cut into 1-inch pieces
- 1 c. fresh cut broccoli
- 1 (8 oz.) can sliced bamboo shoots, drained
- Trim and discard excess fat from steak.
- Cut steak into very thin slices; set aside.
- In small bowl, combine soup, cornstarch and soy sauce; stir to blend.
- Set aside.
- In 10-inch skillet or wok over medium-high heat in 2 tablespoons hot oil, stir-fry beef strips and garlic until meat is browned.
- Remove from skillet. Add remaining 1 tablespoon oil to skillet.
- Add green onions and broccoli; stir-fry 1 minute.
- Add bamboo shoots; stir-fry 30 seconds more.
- Return the beef to skillet.
- Stir in soup mixture; heat to boiling.
- Cook 1 minute more.
- Spoon over rice.
