Baked Bluefish New England Style

  1. Leave fish whole.
  2. Season inside and out.
  3. Mix crumbs, onion, herbs and butter, adding a little milk or fish broth if stuffing seems too dry.
  4. Stuff fish; secure with skewers or toothpicks. Slit skin of fish several times to prevent bursting.
  5. Lay 2 slices pork in heated baking pan.
  6. Place fish on top; dredge with flour. Cover with third pork slice and place in hot oven.
  7. Bake at 400u0b0 for 8 to 10 minutes per pound.
  8. Baste as soon as fat runs and continue to baste every 8 to 10 minutes until done, which will be in about 3/4 hour.
