Woo'S Blue-Plate Special Meat Loaf(In Honor Of Stallion, Clifton Boy)

  1. In a large bowl, mix ground beef, veal and pork lightly with fork; set aside.
  2. In saute pan, heat bacon fat.
  3. Add onion and garlic; saute until soft and translucent.
  4. Add parsley, salt, thyme, sage and pepper.
  5. Stir in wine (beef broth if one prefers). Cook over high heat, stirring, until wine is nearly evaporated. Remove from heat and let cool.
