Fruity Oat-Bran Muffins
- 1 1/2 c. oat bran
- 1 1/3 c. quick cooking oats
- 1 1/2 c. all-purpose flour or 2/3 c. all-purpose flour and 2/3 c. whole wheat flour
- 1/4 c. sugar
- 2 tsp. baking soda
- 1 tsp. salt
- 2 tsp. cinnamon
- 2 whole eggs or 1 whole egg and 2 egg whites
- 5 to 6 ripened bananas, mashed (approximately 2 c.)
- 1 (16 oz.) can crushed pineapple, packed in juice
- 1/3 c. vegetable oil
- 1/4 c. honey
- 1 tsp. vanilla extract
- Combine oat bran, oats, flour(s), sugar, baking soda, salt and cinnamon in a large bowl.
- Set aside.
- In another bowl mix remaining ingredients.
- Combine with dry ingredients; do not overmix.
- Coat two 12-muffin tins with nonstick cooking spray or line with muffin cups.
- Fill each 2/3 full with muffin mixture. Bake at 375u0b0 for 20 minutes or until browned.
