Pumpkin Squares
- 1 pkg. yellow cake mix
- 1/2 c. butter or margarine, melted
- 1 egg
- 3 c. (1 lb. 14 oz.) can pumpkin pie mix
- 2 eggs
- 2/3 c. milk
- 1 c. reserved cake mix
- 1/4 c. sugar
- 1 tsp. cinnamon
- 1/4 c. butter or margarine
- Grease bottom only of a 13 x 9-inch pan. Reserve 1 cup cake mix for topping. Combine remaining cake mix, butter and 1 egg. Pour into pan.
- Combine pie mix, 2 eggs and milk.
- (Tip:
- When using 1 pound can solid packed pumpkin, add 2 1/2 teaspoons pumpkin pie spice and 1/4 cup firmly packed brown sugar.)
- Place filling over base.
- Combine reserved cake mix and 1/4 cup sugar. Sprinkle topping over filling.
- Bake at 350u0b0 for 45 to 50 minutes until knife inserted in center comes out clean. Cool and cut into squares.
- Serve with whipped topping.
