Crab Croquettes
- 1/3 c. chopped mild onion
- 6 Tbsp. butter or margarine
- 1/4 c. flour
- dash of cayenne
- 1/2 tsp. Worcestershire sauce
- 1/2 tsp. Dijon-style mustard
- 1 c. milk
- 1 tsp. fresh lemon or lime juice
- 1 sprig parsley, chopped
- 2 (7 oz.) cans crab meat
- salt
- 1 egg, beaten
- 2 Tbsp. water
- fine bread crumbs
- lemon wedges
- Saute onion in 4 tablespoons butter for 5 minutes.
- Blend in flour and seasonings.
- Add milk and cook until thick, stirring constantly.
- Remove from heat; stir in lemon juice, parsley and crab meat.
- Season to taste with salt.
- Chill.
- Shape into croquettes with hands.
- Dip croquettes into egg, then in crumbs. Fry slowly in remaining butter until browned on both sides.
- Serve piping hot with lemon wedges.
