Oven Fried Chicken Breasts
- 4 skinless, boneless chicken breasts
- 2/3 c. crushed Special K
- 1/4 tsp. garlic powder
- 1/8 tsp. ground black pepper
- 1/4 c. grated Parmesan cheese
- fat-free mayonnaise
- Preheat oven to 350u0b0.
- Meanwhile spray a broiler pan rack with nonstick spray (Pam).
- Crush Special K on a piece of wax paper with a rolling pin.
- Pour Special K in a plastic or paper bag and add garlic powder, pepper and Parmesan cheese.
- Spread mayonnaise on both sides of chicken breasts.
- Place chicken breasts, one at a time, in bag with mixture and shake to cover chicken breast.
- Place breasts on broiler rack.
- Bake chicken breasts for 45 to 50 minutes.
- When breasts are done, turn broiler on long enough for additional browning, if desired.
- Makes 4 servings.
