Country Fair Soft Pretzels

  1. Dissolve yeast in 1/4 cup warm water; stir in remaining 1 cup water.
  2. Mix
  3. salt with 4 cups flour in large bowl.
  4. Add dissolved yeast.
  5. Add
  6. enough
  7. additional flour to make stiff dough.
  8. Knead 10 minutes or until dough feels elastic.
  9. Round dough
  10. into
  11. ball. Place
  12. in lightly greased bowl, turning to coat
  13. dough.
  14. Cover; let
  15. rise in warm place until doubled in bulk,
  16. about
  17. 45 minutes. Pinch off small amount of dough and roll
  18. between
  19. hands to form coil about 20 inches long and 1/4 inch
  20. in
  21. diameter.
  22. Shape
  23. coil as pretzel.
  24. (Make a loop by carefully
  25. picking
  26. up
  27. ends and forming a loop in the center; bring left end over to the right and right end under the left, forming a
  28. twist
  29. at top of loop.
  30. Turn the ends over and back onto loop, pressing ends against sides.) Repeat with remaining dough.
  31. Dissolve
  32. baking
  33. soda
  34. in
  35. water and bring to a boil. Drop one
  36. pretzel
  37. at a time into boiling water and let boil 1 minute
  38. or
  39. until
  40. pretzel
  41. floats.
  42. Remove; drain.
  43. Place on buttered
  44. baking
  45. sheets.
  46. Sprinkle with coarse salt.
  47. Bake at 475u0b0
  48. for
  49. 12 minutes or until golden brown.
  50. Place on rack to cool.
