Oatmeal, Cornflake Cookies
- 1 c. Parkay (2 sticks)
- 1 c. sugar
- 1 c. salad oil
- 1 c. brown sugar, firmly packed
- 1 large egg
- 1 c. rolled oats
- 1/2 c. shredded coconut
- 3 1/2 c. flour
- 1 c. crushed cornflakes
- 1/2 c. chopped pecans
- Cream butter and sugar together.
- Add egg and oil to mixture and mix well.
- Mix remaining ingredients thoroughly and add to butter mixture, then add 1 teaspoon each of the following to the mixture:
- soda, salt and vanilla.
- Form into balls the size of a walnut and place on ungreased cookie sheet.
- Flatten with fork dipped in water.
- Bake in preheated oven at 350u0b0 for 12 minutes if crispy cookies are desired.
- For chewy cookies, cut back time to 10 minutes.
- Cool on cookie sheet before storing.
- These are very crisp and store well.
