Cheesy Spinach-Tomato Strata

  1. Heat oven to 350 degrees Fahrenheit.
  2. Coat six 4-ounce ramekins with butter-flavored cooking spray.
  3. In a large bowl, whisk together the eggs, heavy cream and Dijon mustard; stir in chopped spinach leaves.
  4. Divide mixture evenly among prepared ramekins.
  5. Divide tomatoes and Jarlsberg cheese evenly among ramekins.
  6. Place ramekins on baking sheet.
  7. Bake 20 minutes at 350 degrees Fahrenheit, or until eggs are set and golden brown.
  8. Garnish with fresh basil, if desired.
