Sweet Potato Banana Custards

  1. In a large mixing bowl, combine sweet potatoes and bananas. Add milk; mix well.
  2. Stir in brown sugar, eggs and salt until well blended.
  3. Spray eight 1/2-inch ramekins, souffle dishes or 6 ounce custard cups with nonstick spray coating.
  4. Divide mixture evenly among the ramekins or cups.
  5. Sprinkle raisins in each cup. Arrange ramekins or cups on a baking sheet.
  6. Combine sugar and cinnamon; sprinkle on top of each.
  7. Bake in a 325u0b0 oven for about 35 minutes or until a knife inserted comes out clean.
  8. Serve warm.
  9. Makes 8 servings.
