Sweet Potato Banana Custards
- 2 c. mashed cooked sweet potatoes
- 2/3 c. mashed ripe bananas
- 12 oz. can evaporated milk (skim)
- 1/4 c. packed brown sugar
- 2 eggs, beaten
- 1/2 tsp. salt
- 1/2 c. raisins
- 1 Tbsp. sugar
- 1/2 tsp. ground cinnamon
- In a large mixing bowl, combine sweet potatoes and bananas. Add milk; mix well.
- Stir in brown sugar, eggs and salt until well blended.
- Spray eight 1/2-inch ramekins, souffle dishes or 6 ounce custard cups with nonstick spray coating.
- Divide mixture evenly among the ramekins or cups.
- Sprinkle raisins in each cup. Arrange ramekins or cups on a baking sheet.
- Combine sugar and cinnamon; sprinkle on top of each.
- Bake in a 325u0b0 oven for about 35 minutes or until a knife inserted comes out clean.
- Serve warm.
- Makes 8 servings.
