Stir-Fried Succotash

  1. Cook bacon in skillet until crisp; reserve 3 tablespoons drippings.
  2. Crumble bacon and set aside.
  3. Cook lima beans as directed on package; drain.
  4. Heat wok or large skillet until hot. Add bacon drippings and vegetable oil; rotate to coat.
  5. Add onions and corn; stir-fry for 3 minutes.
  6. Add lima beans, tomatoes and okra; stir-fry for 2 to 3 minutes.
  7. Add chicken broth, sugar, salt, pepper and crumbled bacon.
  8. Cover; continue cooking a few minutes.
  9. Serve over rice, if desired.
  10. Yields 6 servings.
