Berry Cobbler
- 3 c. berries
- 1 c. sugar
- 1 c. water
- 1 c. flour
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1/4 c. butter or margarine
- 1/2 c. sugar
- 1 egg (optional)
- 1/2 tsp. vanilla
- 1/2 c. milk
- 1/4 c. sugar
- Make a syrup with 1 cup sugar and water by heating to a boil. Sift together flour, baking powder and salt.
- Cream butter, 1/2 cup sugar and vanilla.
- Add beaten egg and beat until smooth.
- Add dry ingredients and milk.
- Beat until smooth.
- Turn batter into 10 x 6-inch baking dish.
- Put berries over batter and sprinkle with 1/4 cup sugar.
- Pour syrup over fruit and batter.
- Bake in moderate (350u0b0) oven 45 minutes.
- There will be a cake layer on top with fruit at the bottom.
- We usually double the recipe.
- Also good with fresh peaches or canned cherries.
