Easy Lemon Meringue Pie
- 1 1/2 c. sugar
- 3 Tbsp. cornstarch
- 3 Tbsp. flour
- dash of salt
- 1 1/2 c. hot water
- 3 egg yolks, slightly beaten
- 2 Tbsp. butter
- 1/3 c. fresh lemon juice
- 1 (9-inch) baked pastry shell
- 3 egg whites for meringue
- In saucepan
- mix
- first
- 4
- ingredients.
- Gradually add water, stirring constantly.
- Cooktnd
- stir
- over
- high
- heat until mixture begins to
- boil.
- Reduce heat, cook and stir for 2 minutes.
- Mix small
- amount
- of
- hot mixture into egg yolks, then return to hot
- mixture.
- Bring
- to boiling point and cook another 2 minutes, stirring constantly.
- Add butter and slowly add lemon juice.
- Pour
- intotastrythell.tpreadteringue over filling, sealing edges to pastry.
- Bake at 350u0b0 for 12 to 15 minutes or until golden brown.
