Carob Chip Cookies With Turkish Apricots
- 2 1/4 c. unsifted whole wheat or whole wheat pastry flour
- 1 tsp. baking soda
- 1 tsp. salt
- 1 c. softened butter or margarine
- 3/4 c. honey
- 3/4 c. carob syrup
- 1 tsp. orange juice or orange extract
- 2 eggs
- 2 c. carob chips
- 1 c. chopped Turkish or any organic apricots
- Preheat oven to 375u0b0.
- In medium bowl, sift together flour, baking soda and salt.
- In large bowl, combine butter, honey, syrup and orange juice.
- With a large spoon, beat until creamy.
- Mix in eggs.
- Gradually add in sifted dry ingredients; mix well.
- Stir in carob chips and apricots.
- Drop by teaspoonfuls onto ungreased cookie sheets.
- Bake for 8 to 10 minutes, or until lightly browned.
