Vegetable Soup

  1. Heat olive oil over medium heat.
  2. Saute onion, celery, garlic and chicken until chicken is browned and vegetables are soft.
  3. Add chicken broth and vegetables stirring after each addition.
  4. Simmer for 30 minutes.
  5. Add remaining ingredients and simmer over low heat for at least 3 hours.
  6. Note: If you prefer, add 2 cups of cooked Orzo pasta 5 minutes before serving.
