Mrs. Doll Kirkley'S Fruit Cake
- 4 1/2 c. cake flour
- 1 tsp. baking powder
- 1/2 tsp. cloves
- 1/2 tsp. cinnamon
- 1/2 tsp. allspice
- 1 lb. butter or margarine
- 2 c. brown or white sugar
- 10 eggs, well beaten
- 1 lb. candied cherries
- 1 lb. candied pineapple
- 1 lb. dates
- 1 lb. raisins
- 1/2 lb. citron
- 4 c. pecans
- 1 c. jelly or honey
- 1 c. syrup or figs
- 1/2 c. cider or blackberry wine
- Sift together flour, baking powder and spices 4 times.
- Set aside, then cream butter thoroughly.
- Add sugar to butter and cream together until light and fluffy.
- Add eggs and mix thoroughly.
- Roll fruits and nuts in flour and spices.
- Add fruits, nuts and flour into batter.
- Then add jelly, syrup and cider or wine.
- Mix thoroughly and pour into four 8 x 8 x 2-inch greased pans lined with heavy paper.
- Grease paper lining too. Bake at 250u0b0 for 3 to 3 1/2 hours.
- Makes 10 pounds fruit cake.
