Cauliflower Casserole
- 1 large head cauliflower, broken into flowerets
- 1 tsp. expeller pressed oil
- 3 green onions and tops, chopped
- 1 pkg. Hain's dry cheese soup mix
- 1 c. shredded cheese (your choice)
- 1 c. skim or low-fat milk
- 1/2 c. plain yogurt or sour cream
- 1 clove garlic, chopped
- 1 tsp. herb seasoning
- 2 Tbsp. chopped or dried parsley
- Heat oven to 350u0b0.
- Saute onions and garlic until onions are tender.
- Add milk, yogurt and soup mix.
- Stir constantly.
- Add seasonings and cheese; stir until cheese melts.
- Remove from heat. Oil a casserole dish.
- Add cauliflower.
- Pour sauce over all. Top with bread or cracker crumbs.
- Bake, covered, for 20 minutes. Uncover and bake until golden brown, 10 minutes.
