Potato Salad(Garden Also Thrown In)
- 1 (16 oz.) can Veg-All mixed vegetables
- 2 c. diced cooked potatoes
- 1/4 c. sliced green peppers
- 1/4 c. diced sweet pickles
- 1 bunch green onions, cut into 3/4-inch pieces (include tops)
- 3 hard-cooked eggs
- lettuce leaves
- 6 salami slices
- 3/4 c. mayonnaise
- 2 Tbsp. horseradish
- dash of hot pepper sauce
- 1 1/4 tsp. salt
- Drain Veg-All thoroughly.
- Combine with diced potatoes, green peppers, sweet pickles, green onions, 4 slices salami and 2 hard-cooked eggs.
- Chill.
- Mix together the mayonnaise, horseradish, hot pepper sauce and salt.
- Add to chilled Veg-All mixture; toss lightly.
- Line a chilled salad bowl with crisp greens; fill with salad.
- Garnish with remaining salami and egg slices.
