Grandma'S Best Baked Beans
- 1 lb. beans
- 1 1/2 c. meat broth
- 1 tsp. salt
- 3/4 lb. salt pork
- 1/2 tsp. black pepper
- 1 medium onion, diced
- 1/2 tsp. celery salt
- 2 Tbsp. brown sugar
- 1 tart apple, diced
- 1 tsp. dry mustard
- 1/2 c. tomato pulp
- 1 tsp. Worcestershire sauce
- 1/2 c. dark molasses
- Sort, wash and soak beans overnight in water to cover.
- Next morning, simmer for 40 minutes (until tender) and drain.
- In bean pot, layer apple wedges, diced onion and beans.
- Combine remainder of ingredients and pour over beans.
- Scrape off salt from salt pork.
- Cut into 1/2-inch squares to rind.
- Press into beans, leaving rind exposed.
- Cover bean pot and bake at 250u0b0 for 6 to 8 hours.
- Add water during baking, if needed.
- Makes 8 servings.
