Laura'S Christmas Morning Eggs
- 10 eggs
- 3 Tbsp. sour cream
- salt and pepper to taste
- 1 lb. sausage (1/2 lb. hot, 1/2 lb. mild)
- 1 bell pepper, chopped
- 1 medium onion, chopped
- 1 c. fresh mushrooms, sliced
- 1 can Ro-Tel tomatoes, drained
- 8 oz. American processed cheese
- 8 oz. Cheddar cheese
- 8 oz. Mozzarella cheese
- Mix eggs, sour cream, salt and pepper in blender and pour in 9 x 13-inch casserole dish.
- Bake 7 minutes at 400u0b0.
- Cook sausage. Add vegetables except Ro-Tel tomatoes and saute until tender.
- Add tomatoes and pour over egg mixture.
- Melt cheeses and spread over egg and sausage mixtures.
- Refrigerate overnight or longer.
- Bake uncovered at 350u0b0 until hot and bubbly.
- Good served with grits souffle and hot curried fruit.
