Chicken Pot Pie
- 2 potatoes, diced
- 3 stalks celery, chopped
- 2 medium carrots, peeled and diced
- 1 chopped onion
- 2 to 3 c. boned, diced chicken
- 1 small can LeSueur peas
- 1 can cream of chicken soup or cream of mushroom soup
- 1 1/2 c. chicken broth
- 1 c. self-rising flour
- 1 c. milk
- 1 stick margarine, melted
- Precook the first 4 ingredients until tender.
- Add chicken and peas and pour into large casserole dish.
- Mix soup and chicken broth.
- Pour over chicken mixture.
- Combine flour, milk and the melted margarine.
- Stir well until most lumps are gone.
- Pour over the chicken and vegetable mixture.
- Do not stir.
- Cook at 400u0b0 until brown and bubbly.
