Spicy Apple Jam

  1. Bring apples and water to boil in heavy large saucepan.
  2. Reduce heat, cover and simmer until apples are falling apart, stirring occasionally, about 30 minutes
  3. Cool 30 minutes.
  4. Press apple mixture through fine strainer into heavy large saucepan.
  5. Place chilies chilies, vinegar and 1 cups sugar in processor or blender.
  6. Add to apples and mix in remaining sugar.
  7. Bring to a roiling boil for 10 minutes.
  8. Add pectin and boil exactly 2 minutes
  9. Stir in minced red jalapeno.
  10. Pour into sterilized jars and place in a water bath for 10 minutes.
  11. Lable, date, and store.
