Swedish Meat Balls

  1. Grind meat together twice.
  2. Soak bread in cream about 5 minutes.
  3. Cook onions in 1 tablespoon of butter until tender. Combine meats, crumb mixture, onion, egg, parsley and seasonings. Beat until fluffy, about 5 minutes at medium speed with electric mixer.
  4. Form into 1 1/2-inch balls.
  5. Brown in 2 tablespoons butter and remove.
  6. Make gravy.
  7. Stir flour into drippings.
  8. Add broth, water and coffee.
  9. Heat and stir until thickened.
  10. Return meat balls to gravy. Cover and cook slowly, about 30 minutes, basting occasionally.
  11. Makes 2 1/2 dozen balls.
