Delicious Pork

  1. Cut pork into 1 1/2-inch slices.
  2. Flatten slightly into a rounded shape.
  3. Brown pork in butter; about 5 minutes per side. Season with salt and pepper and bake at 350u0b0 for 35 to 40 minutes in a well-greased pan.
  4. Pour off fat.
  5. Turn oven up to 500u0b0.
  6. Mix cheese, mustard and 2 tablespoons whipping cream in bowl.
  7. Spread mixture over pork and bake at 500u0b0 for 3 to 5 minutes or until topping bubbles.
  8. Remove pork from pan and keep warm.
  9. In the pan, the pork was cooked in, mix apple juice and 3 1/2 tablespoons of whipping cream.
  10. Cook over low heat, stirring constantly and scraping the bottom and sides of the pan.
  11. Cook 3 to 5 minutes, until sauce is slightly thickened.
  12. Pour over pork and sprinkle with parsley.
