Delicious Pork
- 2 lb. boneless pork loin
- 1/2 c. butter
- salt and pepper to taste
- 3/4 lb. Swiss cheese, grated
- 2 Tbsp. Dijon mustard
- 2 Tbsp. whipping cream
- 1/4 c. apple juice
- 3 1/2 Tbsp. whipping cream
- parsley to garnish
- Cut pork into 1 1/2-inch slices.
- Flatten slightly into a rounded shape.
- Brown pork in butter; about 5 minutes per side. Season with salt and pepper and bake at 350u0b0 for 35 to 40 minutes in a well-greased pan.
- Pour off fat.
- Turn oven up to 500u0b0.
- Mix cheese, mustard and 2 tablespoons whipping cream in bowl.
- Spread mixture over pork and bake at 500u0b0 for 3 to 5 minutes or until topping bubbles.
- Remove pork from pan and keep warm.
- In the pan, the pork was cooked in, mix apple juice and 3 1/2 tablespoons of whipping cream.
- Cook over low heat, stirring constantly and scraping the bottom and sides of the pan.
- Cook 3 to 5 minutes, until sauce is slightly thickened.
- Pour over pork and sprinkle with parsley.
