Enchiladas
- 1 1/2 lb. hamburger
- 1 chopped onion
- 1 can enchilada sauce
- 1 pkg. flour shells
- 1 (4 oz.) can diced green chilies
- 1 pkg. taco seasoning
- 1 (6 oz.) can tomato paste
- 1 pkg. enchilada mix
- Brown hamburger and 1/2 onion; drain.
- Stir in 1/2 package taco seasoning (all for spicier) and 3/4 cup water; simmer.
- In separate pan, put tomato paste, 3 cans water and package of enchilada mix.
- Bring to a boil.
- Dip flour shells in sauce. Place in greased dish and fill center with hamburger, onion and green chilies.
- Roll up and turn seam side down.
- Pour remaining sauce over and add necessary amount of canned sauce to cover.
- Top with mixture of Monterey Jack and Cheddar cheese (grated).
- Bake at 350u0b0 for 30 to 45 minutes.
