Holiday Prune Butter Bread
- 1 c. lightly packed pitted prunes
- 1 tsp. lemon juice
- 2 Tbsp. honey
- 3 to 3 1/2 c. all-purpose flour
- 1 pkg. active dry yeast
- 1 tsp. ground cardamom
- 1 c. milk
- 1/2 c. margarine or butter
- 1/3 c. sugar
- 3 eggs
- 1 tsp. vanilla
- 2 c. whole wheat flour
- 1 c. chopped walnuts
- 2 tsp. ground cinnamon
- 1 Tbsp. melted margarine or butter
- For prune butter, in a saucepan, combine prunes, lemon juice and 3/4 cup of water.
- Bring to boiling.
- Reduce heat.
- Simmer, covered, for 40 minutes.
- Remove from heat; stir in honey.
- Cool. Place in a food processor bowl.
- Process until smooth.
- Cover and cool.
