Custard Filled Cornbread
- 2 eggs
- 3 Tbsp. butter flavored Crisco
- 3 Tbsp. sugar
- 1/2 tsp. salt
- 2 c. milk
- 1 1/2 Tbsp. white vinegar
- 1 c. all-purpose flour
- 3/4 c. yellow corn meal
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1 c. heavy cream
- Preheat oven to 350u0b0.
- Grease an 8-inch square pan with butter flavor Crisco.
- Put greased pan in oven and let it get hot while you mix the batter.
- Melt Crisco; mix with eggs until well blended. Add sugar, salt, milk and vinegar and beat well.
- Mix in flour, cornmeal, baking powder and soda; mix just until the batter is smooth and no lumps appear.
- Pour batter into heated dish.
- Pour cream into center of batter; do not stir.
- Bake for 1 hour or until lightly brown.
