Chicken A L'Mandarin
- 3 lb. frying chicken, cut into serving pieces
- 1 Tbsp. margarine
- 1 Tbsp. honey
- 1 tsp. soy sauce
- 1/2 tsp. salt
- 1 c. mandarin juice
- 1 Tbsp. mandarin peel
- 1 Tbsp. white wine
- 1 tsp. ground ginger
- freshly ground pepper
- Combine all ingredients except chicken and mandarin juice. Coat chicken pieces with marinade and refrigerate 30 minutes or overnight.
- Remove chicken from marinade and place in baking dish. Bake for 20 minutes in a 400u0b0 oven.
- Reduce heat to 300u0b0, continue baking, turning chicken, basting with marinade.
- Bake until chicken is done, about 20 minutes.
- Five minutes before removing from oven, pour mandarin juice over chicken.
- Serve marinade and drippings from pan in a separate bowl.
- Serves 4 to 6.
